おでんに「温かい」以外の付加価値を載せたマーケティング
最初にセブンの店頭でおでんのポップを見た時に「おー、これは凄いなぁ」とうなりました。
そのセブン-イレブンのおでんのCMがこちら。
よく知られている通りコンビニの品目の中でおでんは利益率が高い、セブン-イレブンとしては売りたい商品なのですが、アイスと同じでこれまでは季節モノ、でした。
暑いときには売れない。
それは単純にあったか～い売り方をしていたからなんですが、ここに糖質制限ダイエットなどの健康志向のベクトルを打ち出してきたのがこのマーケティング。
おでんは低カロリー。
いや、他にも低カロリーなのはあるんですよ、実際は。
けど低カロリーで高粗利なのはセブン-イレブン的にはやっぱりおでんなんでしょうね。これで通年売るためのキャッチができました。凄い。

ただ・・・おでんってさ・・・
実際に近くのセブン-イレブンでおでん人気を目の当たりにしました。
そこはレジが2列の小さめの店舗で、レジ前に一列に並んで空いたレジに分岐するY字型の導線。
左のレジでお姉さんがおでんを選びだしたので、じゃぁ右かなぁ・・とおもって並んでいたら、右のおねえさんが左をみて「私もおでん・・・」的にチョイスをし始めたときの列に並んでいる人の諦め感は・・・
そう、せっかくの健康おでんマーケティングですがレジの回転を下げてる疑惑が・・・。
同じ感想の人もやっぱりいるようで・・・。

セブンで前のオバちゃんが「おでんの具全部買えませんか？」という意味分からん事言って店長と話し合いでレジ一個潰れて、隣レジ列に後ろから並ばされて、大行列なって超待った。店長はドンマイ。オバちゃん空気読め。昼時間やぞ。

勝手に考えた対策は・・・?
高粗利とはいえ低単価なおでんで客回転を下げてしまうとせっかくのいいマーケティングも台無しです。
列に並びながらこの渋滞に対する対策を考えてみました。
それは・・・CMでサンプルで出ているようなセットはもうさっさと割引を入れて、お客さんが選ばなくてもいいようにしてしまう。
おつまみセット140kcalの牛すじ串・焼きちくわ・こんにゃく・ロールキャベツ・大根は482円から50円引いて432円で販売。
とか全種盛りとかで760円とか、とにかく決め打ちに誘導するとお客さんが迷っている時間を短縮できます。
さらに効率を上げるべく、電子マネー決済(nanacoでもいいや）だとさらに何円引きとかこんにゃく1個無料とかとにかく回転を上げる割引を入れてしまう。
まぁ電子マネーに絡める所は全コンビニさっさと割引すればいいのに、と思っているのですが・・・。
ツイートにもあった通り、コーヒーやおでん、直前でやめたビールなど最近のセブンは尖った付加価値の高いマーケティングをしてきますがとかく現場から「またかよ～」と聞こえてきそうな方策も多いので、客数重視なひねりが欲しいなぁ、と思った感じです。
